The tart of the granny smiths against strong coffee. Kinda nice.
I felt like making a batch of banana pancakes to go with these deli beef franks mum bought and perfect fried fish xx fresh tomatoes the sister prepared but there were these week old pack of granny smiths sitting in the fridge that looked kind of sad.
I tried out Jamie Oliver’s banana pancake recipe, cutting the bananas out for apples, instead of the usual fluffy pancake recipe I make on weekends. I like how he uses measurements like knobs, heaping teaspoons and pinches and everything because it makes it a bit interesting. I mean, I’ll never know how high he heaps his teaspoon, I’ll never know how much salt he can pinch between his thumb and forefinger. I don’t even now how much a knob of butter is (but it felt like it made sense to me eyeing an amount as big as a very small door knob).
Since it’s the weekend I ditched the mils and the cups and the teaspoons and used my third baker’s apprentice eye. I added more flour and some buttermilk and sugar because I didn’t like the look of my batter.
You should too, if you’re planning on using the above recipe because we had them for breakfast this morning and it turned out to be a damn good batch.
